After School Snack: Pumpkin Chocolate Chip Granola Bars

Pumpkin chocolate chip granola bars with a glass of Hood whole milk.

It’s back to school season and moms everywhere are scrambling to get back to a normal routine. After a fun-filled summer, transitioning to the everyday rush of getting out the door on time, school drop-off and everything else can be hectic. My girls are still home this year but I wanted to come up with an easy and healthy after school snack to share with my mom friends; something to make life a little easier! These pumpkin chocolate chip granola bars are full of nutrient dense ingredients and are SO good!

Disclosure: this post is sponsored by Hood® but opinions are my own.

Pumpkin chocolate chip granola bars

Fall is my favorite season; bring on the cooler weather, changing leaves, hot coffee and pumpkin spice everything! I love a seasonally themed snack and these granola bars came out better than I could have hoped. They are just the right mixture of dense, sweet and chewy. Plus, they are a perfect after school snack because they are easy for your kids to grab themselves and travel well if you have after school activities to get to.

Toddlers drinking Hood whole milk with pumpkin chocolate chip granola bars

We paired our granola bars with a glass of Hood® Whole Milk in the LightBlock® Bottle for some added protein. My girls still love drinking a cup of milk when they wake up in the mornings and usually have one more cup throughout the day. I’m happy they still love it because the calcium and vitamin D are great for their growing bones. We always count on Hood because of their promise for providing premium, high quality milk in every drop! They also use the LightBlock Bottles that protect their milk and ensure a delicious taste every time!

Pumpkin Chocolate Chip Granola Bars

When I bake with the girls I like to keep recipes quick and simple because you know how toddlers can be (and two of them is a whole different ball game). This recipe is seriously simple and definitely a good one for little helping hands. I like to pre-measure all of the ingredients into easy-to-pour bowls and cups so that my girls can take turns easily (and peacefully). I also give them each a mixing spoon of their own because, duh, that’s the funnest part!

toddlers mixing granola bars

First, preheat the oven to 350 degrees F, line an 8×8 pan with parchment paper and set aside. Next, you’re going to add and mix the oats, pepitas, chia seeds, pumpkin pie spice, sea salt and chocolate chips together in a mixing bowl. In a separate bowl add and mix the pumpkin puree, melted coconut oil, honey and vanilla together. Then add the dry ingredients to the wet ingredients and stir until well combined. Pour this mixture evenly into the 8×8 lined pan and then compress it. Bake 20 minutes and let cool completely before cutting bars. Store them in the fridge (I found this helped them set really well).

Side story: during our mixing process one of my girls was drinking some of her Hood Milk and I was a little distracted, so when she asked me “milk?” and I said “yes” assuming she was asking if she could have some. She continued to dump the rest of her milk into our granola bar mixture, hah! We had already mixed everything together so I kind of just had to go with it. It’s safe to say adding a few tablespoons of Hood Whole Milk will not affect your recipe negatively.

Next time I make this recipe I am definitely making a double batch because we all loved them so much! I’m 38 weeks pregnant and am planning on stock piling these granola bars for a quick snack between feedings. I feel like they’ll make a great postpartum snack full of protein, healthy fats and fiber! This thought just came to me too – these would be great to break up and eat with some Hood Milk for more of a cereal texture. I guess I’ll try that next time too!

So there you have it, a healthy and easy after school snack for your kiddos. I hope you enjoy and let me know if you try them any other way!

#ad Getting into the Mother’s Day spirit with the #ad Getting into the Mother’s Day spirit with the sweetest surprise and I’m a little obsessed with my new @laifen_tech SE Lite!

I’ve been loving how lightweight it is (seriously so easy on the arm), how powerful yet surprisingly quiet it is and how smooth and shiny it leaves my hair with less frizz and less time spent getting ready.

As a mom, anything that helps me get ready faster means more time for the fun stuff, like little dates and making memories with my girls!

If you’re looking for a thoughtful Mother’s Day gift idea (or sending a hint 😉), this is such a good one. Luxury feel, beautiful design and so practical too. Treat yourself or the mama in your life, gift Laifen for this Mother’s Day: Now, it’s Mom’s Time to Glow!

The “just one more…”
The “I’m not comfy…”
The endless back and forth…

And it always leads to a rough morning for everyone (parents included).

Lately, we’ve been making it feel more like a fun ritual than a battle with their new pillows from @dreamjellie ! We swap out their JellieSkinz, let them pick their favorite each night, and give them something they actually get excited about. I love that their pillows are hypoallergenic AND fun and squishy!

We’re not perfect sleepers over here, but this has helped bedtime feel a little calmer and a lot less stressful for us.

#OTCpartner We went with a construction theme to celebrate our sweet boy, with all the details that made it feel like his own little job site! Road table setup with cones and trucks, snack stations, and his work site cake. The cardboard Construction Archway and Front Loader from @orientaltrading tied it all together and made the whole space come to life! Most of the party decor is from Oriental Trading - they had so many fun options for this theme! 🏗️🚧🦺👷🏻‍♂️

The sweetest day celebrating our two-year-old!

I’m so ready for days spent outside in the sun so I pulled out all of my pretty dresses and warmer weather items. I’ve decided that I miss wearing light scarves and I’m bringing them back out. Did anyone else live in a scarf years ago? It was my staple and I have so many!

My new sun hat and soft cotton scarf are from @pistildesigns and they are perfect and lovely. I’ll link them in my stories! ☺️

A few weeks ago I got an Advanced MRI scan through A few weeks ago I got an Advanced MRI scan through @function Health and it’s something I’ve been really curious about for a while!

The @ezrainc scan was only 22 minutes and screened up to 13 organs for 500+ conditions (including certain types of cancer). 22 minutes honestly made it feel so doable as a busy mom. I’m always trying to be proactive with my health (especially after having 4 kids), and this felt like a really aligned way to check in on my body without waiting for something to be wrong.

I also have some family history of cancer, so prevention has always been in the back of my mind. This gave me a lot of peace of mind in a way that felt simple and not overwhelming. It was quick, comfortable, and I loved that there’s no radiation involved.

What I appreciate most is how much more accessible this kind of testing is becoming, Function has really made it feel like something normal people can actually do.

Function gifted me this scan, and they gave me a $100 credit to share if you’ve been thinking about doing this too - use my code ChristinaM100 or the link in my bio!

I turned our favorite family moments from 2025 into a “Year In Review” Photo Book with @mixbook . From everyday little memories to big milestones, everything is in one place and we can flip through it together (instead of scrolling forever)!

The best part? It was SO easy to make. Their drag-and-drop editor and ready-to-use designer quality templates did most of the work for me! Yay!

Now we have something tangible we can enjoy for years to come. The kids really enjoy looking at our favorite photos. 🫶🏻

#BarkAd Parents, if you’re looking for a way to co #BarkAd Parents, if you’re looking for a way to communicate with your kids but also help keep them safe from the dangers of the internet check out the Bark Watch! @barktechnologies

My girls are becoming more active in after school activities and sports so I wanted them to be able to contact me when I’m not around. I also did NOT want them to have any access to the internet and the Bark Watch has no apps, no social media and no browsers and they can’t be added. So if the girls need to call or text me they can - I control the contacts that go into the Bark Watch and can monitor everything on the parent dashboard.

Plus it has 24/7 GPS location tracking which is a great tool since my girls are getting a little more freedom in our small community. They love to play outside with their friends and wander around so a quick text lets them know it’s time to come in!

There’s a time and a place for new technology and this is a great first step if you’re a cautious parent like me! Definitely check out the Bark Watch and all of its safety features.

The girls had a spectacular Wicked party this past weekend, celebrating with family and friends. The life-sized cut outs of Glinda, Elphaba and Oz were such a hit! The beautiful decor was from @orientaltrading as always. They have the best party supplies! #OTCpartner

Proud of these two girls is an understatement. This has been a big year for them and they have adjusted so well to a new school. 🫶🏻
