Healthy Toddler Breakfast: Strawberry Banana Overnight Oats

I’m always looking for healthy breakfast ideas for my twin toddlers and these strawberry banana overnight oats are so delicious (and easy)! My girls love eggs and eat them most mornings, but it’s nice to change it up and offer them something different once in a while. I love that this breakfast is plant-based, gluten free and full of good nutrients!

If you follow me on Instagram, you know that feeding my girls healthy and nutritious foods is really important to me and I share a lot of what they eat daily. I definitely believe that feeding kids clean and healthy foods from a young age helps them become great little eaters. My girls are pretty adventurous and eat tons of different foods: chicken, steak, avocado, almond butter, goat cheese, mushrooms, peppers, spinach, asparagus, pecans, dates, almondmilk, green smoothies and the list goes on and on. I’m really proud of them and their willingness to try most things! The key foods I focus on giving them are TONS of vegetables, fruits, multiple sources of protein and healthy fats. Don’t get me wrong, we let them have treats and be kids, but we try to always choose cleaner ingredient choices because it truly does matter!

So back to breakfast! There are so many ways to make overnight oats, but I thought with summer right around the corner I would try a refreshing recipe with fruits. You can make them with the liquid of your choosing, but I like to use a combination of dairy-free options like Almond Breeze Almondmilk Yogurt and Almond Breeze Almondmilk (these together with the oats make an unbelievably creamy mix). If you haven’t tried Unsweetened Original Almond Breeze Almondmilk Yogurt you definitely need to; it’s a great plant-based, dairy-free yogurt that has no artificial ingredients and is a good source of calcium and an excellent source of vitamin E. It’s the perfect dairy-free choice that won’t have you sacrificing taste.

Putting this recipe together literally takes about 5 minutes – it’s so easy! First, stir together the Almond Breeze Almondmilk, Almond Breeze Almondmilk Yogurt and old-fashioned oats. Next, use half of the mixture and divide it between two serving dishes (I used cute wine glasses because I didn’t have the usual glass jars). Then start layering half of the sliced strawberries and bananas. I like to add a little crunch to my overnight oats, so I always put some gluten-free granola in (add half to this layer). After that just start over and add each layer again. If you want it to be extra pretty, you can garnish it with strawberries or bananas. Once I’m done with the layers, I drizzle a little bit of honey on top and put the dishes in the fridge to sit overnight!

Trust me, your toddler(s) will love this fun breakfast – mine devoured these overnight oats and then asked for more! Also, there are SO many varieties to try; the possibilities are really endless! The next one I make will definitely have some chocolate and almond butter in it, yum. Let me know if you try this recipe or a variation in the comments!

Quick, easy and healthy overnight oats recipe that your toddler will love!

Ingredients

  • 1 1/4 C Old Fashioned Oats

  • 1/2 C Unsweetened Original Almond Breeze Almondmilk Yogurt

  • 1 C Almond Breeze Unsweetened Original Almondmilk

  • 1 Banana, Sliced

  • 1/2 C Strawberries, Sliced

  • Optional Toppings
  • 1/4 C Gluten-Free Granola

  • 2 TBSP Honey

Directions

  • Stir together Almond Breeze Unsweetened Original Almondmilk, Unsweetened Original Almond Breeze Almondmilk Yogurt and oats together – add 1/2 to two serving dishes
  • Layer half of strawberries, bananas and optional granola
  • Add the rest of oat mixture
  • Layer the rest of the strawberries, bananas and optional granola
  • Drizzle optional honey on top
  • Let sit in fridge overnight and enjoy in the morning!

Doing a toy rotation every month helps keep them engaged and not bored! I also try to minimize the number of toys available because it can be overstimulating when there’s too much.
