Gluten Free Gingerbread Cookies

‘Tis the season for all of the yummy and festive treats! This is one of my favorite holiday cookie recipes because it’s pretty healthy and definitely delicious. We made these gluten free gingerbread cookies last year a few times because they were such a hit! You can either make this dough into cute little gingerbread men (cook a little longer for firmer cookies) or just make regular round cookies (cook a little less for soft and chewy).

Oh What Fun It Is To Bake

I love to bake with the girls and we do it so often that I try to use alternative recipes that use less sugar and more nutritious ingredients. If we’re going to eat cookies everyday they should probably have some sort of nutritional value, hah! These cookies use almond butter, coconut oil, coconut sugar and coconut flour instead of the usual gingerbread ingredients. The thing is, they taste just as good (to us anyway!). I’ve been lucky (or methodical) in that my girls are adventurous eaters and try just about anything I give them. So to them, a cookie is a cookie no matter what is in it…and for that I am grateful!

Now, what’s a cookie without a big glass of cold, refreshing milk?! Of course we paired our yummy gingerbread men with our favorite Hood® Whole Milk in the LightBlock Bottle®. A perfect pairing if you ask me, especially since I know it helps keep my growing girl’s bones healthy and strong! Gluten Free Gingerbread Cookies

This recipe is quite simple to make! First whisk together the eggs, almond butter, coconut oil and then add the molasses, vanilla and coconut sugar. In a separate bowl combine the salt, spices, coconut flour and baking soda. Add the dry mixture into the wet and combine well. Place your dough between two pieces of parchment paper and wrap it up – that’s it! Now, if you want to make gingerbread men I highly suggest putting your dough in the fridge overnight. I have attempted just putting the dough in the freezer for 15 minutes and it did not go well. The dough is too wet and will not hold up well with cookie cutters. After leaving the dough in the fridge overnight it will be so much easier to cut! If you just want to make regular round cookies, definitely just use the freezer for 15 minutes.

After the dough has chilled use a rolling pin to roll it out between the two pieces of parchment paper (so it doesn’t stick). Once it’s rolled out get to using those cookie cutters! You’ll probably have to roll out the dough a few times before you’ve used up all of it. We used a variety of sizes for our gingerbread men – the smaller cookies were the easiest to work with for sure. Don’t make your cookies too thick because of the wet nature of this dough!

Line your baking sheet with parchment paper and bake at 350 degrees for about 9-10 minutes for gingerbread men. Transfer to a wire rack and cool completely. We used some pre-made royal icing to decorate to save time and dishes! Serve with a big glass of Hood milk for the perfect festive snack.

Gluten free gingerbread cookies that are perfect for using with cookie cutters for a festive snack!

Ingredients

  • 1 egg

  • 1 egg yolk

  • 2/3 cup almond butter

  • 1/4 cup molasses

  • 1/4 cup coconut sugar

  • 2 tbsp coconut oil softened

  • 1/4 cup coconut flour

  • 1 tsp vanilla

  • 1 tsp baking soda

  • pinch sea salt

  • 1 tsp cinnamon

  • 1 tsp ground ginger

  • 1/4 tsp allspice

Directions

  • Preheat oven to 350 and line baking sheet with parchment paper.
  • Whisk eggs, almond butter and coconut oil together. Add coconut sugar, molasses and vanilla.
  • In a separate bowl combine coconut flour, baking soda, spices and salt.
  • Add dry mixture to wet and combine.
  • Refrigerate dough overnight.
  • Roll dough between two pieces of parchment paper and use cookie cutters.
  • Transfer carefully to baking sheet.
  • Bake 9-10 minutes, cool completely on wire rack.

Notes

  • Use royal icing to decorate!

Disney Trip Day 6: Magic Kingdom • Every morning Disney Trip Day 6: Magic Kingdom

• Every morning I ordered a large flat white extra shot from Java at @swandolphin . Usually grabbed a parfait, pastry, egg sandwich and fruit for the kids to share.
• Walked from Swan to Yacht Club bus stop to go to MK. Swan has a bus BUT it drops you at the ticket center - if you grab a Disney bus you get right into the park (no Ferry or Monorail ride). Mostly a plus to save time if you’re rope dropping or early entry. 
• We grabbed coffee on Main Street and rope dropped Pooh for Harrison - it was awesome! We hung out in Fantasyland all morning and did so many rides during early entry. I wish the food spots opened before 11 because we backtracked later to find some sweet treats we had on our list to try!
• We rode Pooh, Dumbo, Barnstormer, Little Mermaid and our first lightening lane was Peter Pan. 
• We caught a parade on our way to Pirates and saw Marie, Mary Poppins, Woody, etc. Henry loved it!
• We got Tiana’s Beignets and they are SO good!
• After Pirates we took castle photos and saw the band playing with Mickey!
• We had lunch reservations at Crystal Palace - the boys LOVE Pooh and this was exciting! It was so hot and a long wait - we had a few meltdowns - but once inside we took our time and really enjoyed the experience. The characters were adorable and Henry just loved it all. Harrison loved them from a distance lol. 
• In the afternoon we took the girls on Space Mountain, the girls and Henry on Seven Dwarfs which he LOVED. I can’t believe how big he smiled and laughed it was a core memory. So excited to have thrill seekers!
• Jesse and I rode Tron with is epic. I can’t wait to take the girls next time - they will love it. 
• We had lots of snacks and ice cream breaks and really enjoyed everything even in the heat. 
• The best part was having Fireworks Dessert Pre-Party tickets. All you can eat treats, crackers, fruit, cheese, drinks in the A/C with seats. Then you get escorted to a private viewing area for the fireworks. Unobstructed views. No fighting the crowd. Always a 10/10 to end the day!

Disney Trip Day 5: Rest/Pool Day • Slept in as mu Disney Trip Day 5: Rest/Pool Day

• Slept in as much as the boys let us. 
• Lounged watching Disney and eating breakfast in the room from Java.
• Jesse took Henry swimming for some one on one time. We brought our own life jacket for him which ended up being a great idea.
• The four girls had lunch reservations at @thecakebakeshop on the Boardwalk. 
• The appetizer, drinks and food were great! We really love this spot and it’s the perfect princess/girly girls place. There is literally glitter on everything. 
• The girls got some pixie dust and made wishes which they take very serious. They are the cutest. 
• Afterwards the girls got to go swimming with Jesse which they obviously love! The pool is always the winner in the kids eyes lol. 
• Mom and I took the boys across to the Dolphin to do laundry and we let them play in the arcade. We played games, ran around and did a photo booth. 
• We had early dinner and early bedtime to prepare for our big day at MK!
• It was a lovely little rest/pool day!

Disney Trip Day 4: Epcot • Grabbed coffee and bre Disney Trip Day 4: Epcot

• Grabbed coffee and breakfast at Java again from the @swandolphin 
• Walked to Epcot (International Gateway back entrance) from the Swan - it’s so close!
• Rope dropped Remy but it was down (I knew this was a common risk) so we decided to enjoy an empty World Showcase and just looked around at all the Flower and Garden Festival topiaries and took photos. 
• We had lightening lanes for Frozen, Figment, Living with the Land, Soarin’ (new one!) and Guardians of the Galaxy.
• We had a late lunch at Via Napoli in Italy which had great reviews but we actually had a terrible meal and service - maybe just a bad day?
• We visited the Aquarium which is the best with kids - they can run free and get a cooling break, went on Nemo, Moana’s Journey of Water was Henry’s favorite and he was soaked (I was prepared with a change though!). 
• During Harrison’s nap we let the kids play at the playground outside of Creations - such a good spot!
• We had so many great snacks at the Festival booths - flatbread, slushies, chicken and waffles with honey, a fancy croissant, dole whips, ice creams, affogato (the BEST) and who knows what else. It’s all so good!
• The boys were done at 6 and Jesse walked them back to the hotel. The girls wanted to stay so we ate more snacks and did more things lol. 
• We casually watched the fireworks on a bench which is so nice - you don’t have to fight the crowd for a spot like at MK. 
• We stayed for extended hours but honestly it wasn’t worth it - all the bigs rides had wait times that stayed super long so we skipped them. We went to Journey of Water at night which was beautiful and then went to Spaceship Earth for the first time - it was actually so fun and obviously it was a walk on lol. 
• By 10 we were done, the girls feet were sore and they were exhausted so we walked home….verrrrry slowly lol. 
• We walked the most this day like 15 miles or something! I will be so honest I bought new Hokas for this trip but my @kizik s were the MVP! My feet were never sore with them so I wore them almost every day. 10/10!! It’s my 3rd trip with them - I have a link, DM me!

Disney Trip Day 3: Hollywood Studios • Grabbed co Disney Trip Day 3: Hollywood Studios

• Grabbed coffee and breakfast from Java at the @swandolphin - used my Marriott breakfast vouchers!
• Walked to Hollywood Studios using the walking path from the Boardwalk - it’s such a nice and quiet walk. 
• Rope dropped Minnie and Mickey’s Runaway Railway which is always so fun and then headed to Toy Story Land.
• We used Lightening Lanes for Toy Story Mania, Slinky, Frozen sing a long, Rise of the Resistance and Millennium Falcon.
• We had an early lunch reservation at Roundup Rodeo BBQ - the food was ok for me but Jesse enjoyed it most! Atmosphere was very fun though, the boys love Toy Story!
• This was a hard day for the boys - it was so hot and we really feel this was the hardest park for toddlers. There was not enough shade and it literally feels like walking through 🔥 lol. 
• The nice part of staying at the Swan is Jesse was able to bail and take the boys home. Mom and I were able to ride Slinky and ROTR with the girls and then we took the Friendship Boat back to the Swan (nice little ride!). 
• We swapped and I got the boys settled for dinner and bed and Jesse took the girls back to HS to ride Millennium Falcon and have dinner. He brought the stroller so they didn’t have to do all the back and forth walking too. 
• We skipped Fantasmic but maybe next time - we have never seen it!
• We also were a couple days before the new Mickey Mouse Clubhouse Live Show - that would have been so fun and a break from the heat!
• Lots of fun new things to look forward to next time though!

Disney Trip Day 2: Animal Kingdom • Grabbed coff Disney Trip Day 2: Animal Kingdom 

• Grabbed coffee and breakfast to go from Java at @swandolphin .
• Walked to the Yacht Club bus stop to catch the Disney Bus.
• Realized we had a Disney pin in our front @bumbleride stroller tire which is comical because we just put a new one on before our trip of course lol. You can see the pin in the photos of the boys. 
• Rope dropped Navi River Journey twice then headed to the Safari. 
• Had Lightening Lanes for Zootopia, Everest, Flight of Passage and Navi again. 
• Had a really great character lunch at Tusker House. Henry had a lot of fun here and we loved the food!
• Walked through to see the Tiger, Otters and enjoyed the scenery. 
• Had lots of snacks: popcorn, ice cream, dole whip, a pineapple crisp sundae and gallons of water - it was so hot. 
• Met Moana.
• Stopped for all the PhotoPass we saw
• Left a little early because the kids were hot, had hurting feet and we had done just about it all! Plus we knew we had another AK day so we would be back!

What a great way to start our trip! 🦁

Disney Trip Day 1: Travel Day • PWM —> MCO on @br Disney Trip Day 1: Travel Day

• PWM —> MCO on @breezeairways direct with extra legroom. The staff is always super friendly. Direct is the ONLY way with kids IMO.
• Harrison used a CARES Harness on the plane which was so helpful! I had never heard of them before but it was a nice alternative to a car seat. @careskidsflysafe 
• We booked @orlandomagicalrides for airport <> hotel transport again. They had a Sprinter van with the a/c pumping, Zootopia playing and car seats for the boys installed! The van was decked out with Disney decals too. 
• The girls used their travel vests from @saferide4kids instead of boosters.
• We were able to check in immediately to Disney’s Swan Hotel (we stayed at the Dolphin last time). The @swandolphin is the best area in Epcot and you get to use or earn @marriottbonvoy points/perks and Disney Deluxe benefits!
• Our stroller rental from @kingdomstrollers was already at the hotel for pickup. 
• I ordered groceries from @vacationgrocerydeliveryfl  and they were there an hour after us. I got some basics for the fridge, diapers, wipes and snacks. 
• We walked to Disney’s Boardwalk for ice cream, it was already so hot. 
• We went back and put the boys to bed and us girls went out for a walk!
• We checked out our morning route to the bus stop through Yacht Club, walked the Boardwalk and Resort circle, grabbed a Mermaid Cookie snack at Yacht Club and checked out the beach and swings.
• Ended the night watching the Epcot fireworks on our balcony!

I’ve been planning this trip for months and I love sharing the details, good and bad! Anyone want my 10 page itinerary? 😂
