It’s the most beautiful time of year in Maine, Fall! The leaves are changing color, the air is cooler, gardens are winding down and seasonal recipes are emerging. The end of the summer months left us with an abundance of tomatoes, zucchinis, squash, basil, cucumbers and carrots from our raised garden beds. It seems like the perfect time to use and review a couple of new kitchen gadgets I received from Tribest, the Dynapro® Commercial High-Speed Vacuum Blender and the Shine Kitchen Co.® Electric Spiralizer. I’m putting my end-of-season veggies to use and making Zucchini Noodles with Pumpkin Seed Pesto with the girls!

Dynapro® Commercial High-Speed Vacuum Blender
Now, I’ve never had a REAL blender before; I’ve always used my $25 mini food processor and it has been fine for my needs. But…WOW, the Dynapro® Commercial High-Speed Vacuum Blender is insanely awesome. It’s the most high-tech and high-powered blender I’ve ever seen or used. This thing is truly a beast! I made a smoothie bowl the other day and I can’t believe how smooth it came out; I’m used to a pretty chunky smoothie, hah never again!
One of the features of this blender is a one touch Vacuum Pump (see photo below) that creates a vacuum seal before blending; this keeps your ingredients from oxidizing and protects flavors, texture and more! Super cool right? I’ll apologize ahead of time because I FORGOT to use the vacuum pump when we made this pesto, ugh, it would have been the perfect time to use it to protect the fresh basil. Next time!
The Shine Kitchen Co.® Electric Spiralizer
Another thing I’ve never had is a spiralizer, so I was excited to try this for the first time (especially with all of the zucchinis from our garden)! The Shine Kitchen Co.® Electric Spiralizer can spiralize ALL the things: zucchini, squash, carrots, beets, apples, potatoes and so many more fruits and veggies. I actually used this the other day to make a raw veggie salad (I’m a huge fan of the trendy raw carrot salad from TikTok). Spiralizing the veggie noodles was way better than using a peeler to get those thin pieces. The spiralizer comes with four different sized cutters for various shaped noodles and is very easy to use!

Zucchini Noodles with Pumpkin Seed Pesto
Now let’s get to the recipe! This is probably one of the easiest dishes to make, especially with the right equipment. To make the pesto you need garlic cloves, lots of fresh basil, pepitas, avocado oil, red wine vinegar and sea salt. The girls tossed all of these ingredients into the Dynapro® Commercial High-Speed Vacuum Blender and I used the “Blend” preset x3 (each time is 30 seconds). It was so simple. I should mention that there are 3 ways to use this blender: the Manual (start or pause anytime), Timer (5 seconds to 5 minutes) and Presets (Blend, Pulse, Combo).
To make the zucchini noodles you need 3 small to medium zucchinis, tomatoes, salt and fresh basil. I had larger sized zucchinis which didn’t fit into the spiralizer’s Feeding Chute, but it was an easy fix with a little trimming! The Shine Kitchen Co.® Electric Spiralizer has a No-Slip Veggie Grip that I secured onto the zucchinis to prevent them from slipping going into the chute (see photo towards the top of this page).
Once you have your zucchini noodles, toss them with the pesto, add a few sliced tomatoes and garnish with fresh basil! You can also toss your noodles and pesto into a frying pan for 2-3 minutes to heat them up if you prefer them that way. We had them both ways and I think I prefer them heated (though both ways are good). If you go that route, just be careful not to overcook your noodles because they can turn to mush in an instant!

Zucchini Noodles with Pumpkin Seed Pesto

Ingredients
- For the Pesto
2 Garlic Cloves
2 Cups Fresh Basil
1/3 Cup Toasted Pepitas
1/3 Cup Avocado Oil
2 Teaspoons Red Wine Vinegar
Sea Salt
- For the Zucchini Noodles
3 Small to Medium Zucchinis
1 Cup Cherry Tomatoes
Sea Salt
Fresh Basil to Garnish
Directions
- Combine all pesto ingredients into blender until well combined and smooth
- Spiralize the zucchini and toss with pesto
- Transfer to serving dish and add in sliced tomatoes
- Garnish with fresh basil
